Hot Cheesy Spinach Dip

Equipment

  • Large saucepan
  • Measuring cups and spoons
  • Mixing spoon or spatula
  • 1-quart casserole or gratin dish
  • Oven

Ingredients

  • 2 Tbsp. butter
  • ¼ cup chopped onion about ¼ medium
  • 2 cloves garlic minced (1 tsp.)
  • 1 Tbsp. all-purpose flour
  • 1 ¼ cups half & half
  • 2 9 oz. packages frozen chopped spinach, thawed and well-drained
  • 1 8 oz. can sliced water chestnuts, drained
  • 1 cup shredded Cheddar cheese
  • 1 oz. package dry vegetable soup mix
  • ¼ cup shredded Parmesan cheese

Instructions

  • Preheat oven to 425°F.
  • Melt butter in a large saucepan over medium heat.
  • Add onion and garlic; cook and stir until onion is crisp-tender and garlic is fragrant, about 2 to 3 minutes.
  • Stir in flour; cook and stir an additional minute.
  • Add half & half and cook, stirring constantly, until mixture boils and thickens, about 2 minutes.
  • Remove saucepan from heat. Stir in chopped spinach, water chestnuts, Cheddar cheese, and vegetable soup mix.
  • Spoon dip into a 1-quart casserole or gratin dish.
  • Sprinkle with Parmesan cheese.
  • Bake dip until bubbly and cheese is melted, about 10 to 15 minutes.
  • Serve warm.

  • Medium Mixing Bowl

Ingredients

  • 8 ounces Philadelphia cream cheese spread
  • 1 cup sour cream
  • 1 ounce Ranch salad dressing mix
  • 10 ounces package frozen chopped spinach, thawed, well drained
  • 8 ounces water chestnuts, drained and chopped
  • ½ cup chopped red pepper

Instructions

  • Mix cream cheese spread, sour cream, and salad dressing mix in a medium bowl until well blended.
  • Stir in the remaining ingredients; cover.
  • Refrigerate for several hours or until chilled.
  • Serve with assorted cut-up vegetables.

Ingredients

  • 1 lb ground beef
  • ¾ cup onion chopped
  • 1 can diced tomatoes 16oz, undrained
  • 1 can red kidney beans drained and rinsed
  • ½ cup instant rice uncooked
  • 3 tbsp green pepper chopped
  • 1½ tsp chili powder
  • ½ tsp garlic powder
  • ½ cup water
  • ½ tsp salt
  • ¾ cup cheddar cheese shredded
  • 8 oz corn chips

Instructions

  • In a skillet, brown beef and onion, then drain
  • Stir in undrained tomatoes, beans, uncooked rice, green pepper, chili powder, garlic powder, water and salt
  • Bring to a boil
  • Reduce heat, and simmer covered for 20 minutes, stirring occasionally
  • Top with cheese, cover, and heat until the cheese melts
  • Sprinkle corn chips around the edge of the skillet
  • Let cool, serve and enjoy!
