The recipe
A Hashbrown Casserole Without Condensed Soup
Hashbrown Casserole is a simple hashbrown casserole without canned soup, made with frozen shredded potatoes, sour cream, cheddar, green onions and butter.
Unlike many cheesy hashbrown casseroles, this version does not use condensed cream soup or a separate cream sauce. Sour cream provides the creamy base, while cheddar and butter bring the richness.
The method is straightforward: mix the ingredients while reserving some of the cheese, transfer everything to a greased 13-by-9-inch baking dish, top with the remaining cheddar, and bake uncovered at 350°F for 30 minutes.
Why it matters
Why This One Is Worth Bringing Back
The defining feature of this Hashbrown Casserole is what it leaves out: there is no canned condensed soup and no separate cream sauce. Frozen shredded potatoes are coated directly with sour cream, butter, cheddar, green onions, salt and pepper.
That makes the texture easy to understand. The potatoes should still look shredded when they go into the pan, and the finished casserole should stay creamy inside while the cheese and exposed potato edges brown on top. Those two textures—the visibly shredded mixture before baking and the creamy, browned finish—are the best visual cues for knowing you are on the right track.
For another simple baked side built around a creamy base, Corn Casserole is the closest companion on the site. If you want a sharper vegetable contrast on the same plate, Crispy Brussels Sprouts bring the opposite texture.
Modern kitchen notes
If You're Making It Today
These are modern editorial suggestions, not changes to the preserved recipe card. When a note comes directly from the existing recipe record, we will say so.
Keep the potatoes visibly shredded
The mixture should look creamy and coated, not blended into a smooth potato mass. That visible shred is the most useful cue before the casserole goes into the oven.
Reserve some cheddar for the top
The preserved recipe reserves some of the cheese for the surface. Keeping that portion separate gives the casserole its melted top instead of burying all of the cheddar inside.
Make-ahead carefully
Editorial convenience: you can assemble the casserole ahead and refrigerate it, but a cold casserole may need additional oven time. Judge doneness by a hot center and browned top rather than inventing a fixed extra bake time.
