The recipe
A One-Pan Dinner Finished with Corn Chips
Texas Beef Skillet is a one-pan ground beef dinner with tomatoes, kidney beans, quick-cooking rice, green pepper and chili powder, finished with cheddar and crunchy corn chips.
The rice cooks directly in the tomato-and-bean mixture, keeping the method compact. Brown the beef and onion first, then add the tomatoes, beans, rice, pepper, seasonings and water to the same skillet.
Cheddar is melted over the finished mixture, with corn chips added at the edge for the final crunchy element.
Why it matters
Why This One Is Worth Bringing Back
Texas Beef Skillet is a compact one-pan dinner where each ingredient has a visible job. Ground beef and onion form the base, tomatoes and kidney beans add body, instant rice cooks directly in the skillet, and green pepper, chili powder and garlic powder provide the seasoning profile.
The final instruction is what gives the dish its strongest visual identity: cheddar melts over the top and corn chips are arranged around the edge of the skillet. That crunchy perimeter is not garnish invented for a photo; it is part of the recorded method.
The site does not yet have a documented cookbook source for this recipe, so the record stays provenance-neutral. It connects naturally to Chicken Tortilla Soup for another corn-and-chile-friendly dinner and to Guacamole for a fresh side.
Modern kitchen notes
If You're Making It Today
These are modern editorial suggestions, not changes to the preserved recipe card. When a note comes directly from the existing recipe record, we will say so.
Cook the rice in the skillet
The instant rice goes into the tomato-and-bean mixture rather than being cooked separately. Keep that one-pan method if you are making the recipe as recorded.
Add the corn chips last
The chips belong around the edge after the cheddar melts. Adding them too early would trade the intended crunch for a softer texture.
Fresh toppings are optional
Sour cream, avocado, cilantro, jalapeño or olives may fit the flavor profile, but none is part of the preserved recipe card. Use them as serving additions, not silent recipe edits.
