The recipe

A Craggy Apple Cake Made for Fall

Knobby Apple Cake is the kind of fall dessert that earns its charm from texture rather than decoration. Three cups of diced apples and a half cup of chopped nuts are folded into a simple cinnamon-scented batter, giving the baked cake an uneven, craggy top and plenty of fruit in every square.

The recipe is wonderfully unfussy: cream the butter and sugar, beat in the egg and vanilla, stir in the apples and dry ingredients, then bake it all in a 9-inch square pan. The finished cake should feel homey and substantial, with soft apple pieces, little pockets of crunch, and just enough cinnamon to make it feel made for cooler weather.

Why it matters

Why This One Is Worth Bringing Back

There is something immediately appealing about a cake that does not try to be polished. With three cups of diced apples and chopped nuts worked through a modest cinnamon batter, Knobby Apple Cake gets its personality from all those irregular pieces pushing through the surface.

That makes it especially worth bringing back now. It feels distinctly autumnal without relying on frosting, glaze or elaborate finishing, and the 9-inch square-pan format keeps it practical for everyday baking, coffee breaks and casual gatherings.

Modern kitchen notes

If You're Making It Today

These are modern editorial suggestions, not changes to the archived recipe. When a variation comes directly from the original source, we will say so.

Let the apples create the texture

The source uses 3 cups of diced pared apples, so this is meant to be an apple-heavy cake. Keep the pieces visible rather than reducing them to a puree or fine mince.

Keep the square-pan format

The printed recipe calls for a greased and floured 9-inch square pan. That format helps give the cake its sturdy, snack-cake character.

Start checking at 30 minutes

The source gives a 30 to 35 minute bake at 350°F. Because apples add moisture, check the center near the early end of that range and continue only as needed.
