The recipe
A Chipped-Beef Cheese Ball with Green Onion Inside and Out
Chipped Beef Cheddar Cheese Ball appears on printed page 3 of Our Favorites, the Jacksonville Area Senior Center community cookbook. Its formula is unmistakably party-food territory: softened cream cheese, shredded Cheddar, chipped beef, garlic salt and green garden onions shaped into one shareable ball.
The onions do double duty in the original method. The white portion is mixed into the cheese with the beef and Cheddar, while the chopped green tops are reserved for rolling around the outside. That simple instruction gives the finished cheese ball its flavor inside and its distinctive green coating outside.
Why it matters
Why This One Is Worth Bringing Back
Chipped Beef Cheddar Cheese Ball earns its place in the archive because the recipe is more specific than its plain printed title suggests. Cream cheese and shredded Cheddar form the base, but chipped beef gives it the savory character that separates it from many other community-cookbook cheese balls.
The treatment of the green onions is especially useful. Instead of mixing the entire onion into the cheese, the source divides it by color: the white part goes inside and the green part coats the exterior. It is a small technique, but one that makes the finished dish visually and texturally distinct.
The source also leaves two ingredients in package language rather than weights: a “large pkg” of shredded Cheddar and one package of chipped beef. Those measurements are preserved as written instead of being converted into modern sizes that the cookbook never specified.
Modern kitchen notes
If You're Making It Today
These are modern editorial suggestions, not changes to the archived recipe. When a variation comes directly from the original source, we will say so.
Soften the cream cheese first
The source begins with softened cream cheese, which is what allows the Cheddar, chipped beef, onion and garlic salt to combine evenly without overworking the mixture.
Keep the onion roles separate
Mix the chopped white onion portions into the cheese mixture, then reserve the green tops for the outside. That division is part of the original method.
Package sizes are intentionally unresolved
The cookbook does not give modern weights for the “large pkg” of shredded Cheddar or the package of chipped beef. The archive keeps those source measurements visible rather than inventing conversions.
