A Four-Ingredient Sunday Pot Roast

Vera Neal’s Sunday Pot Roast is built from just four ingredients: a 4- to 6-pound chuck roast, dry onion soup mix, cream of mushroom soup and quartered potatoes. The roast and potatoes are sealed tightly inside heavy-duty foil and baked for four hours.

It is a distinctly old-school oven-roast method—the foil packet traps the soup mixture around the meat and potatoes, creating a self-contained Sunday supper with almost no active cooking once it goes into the oven.

Seal the foil tightly

The source specifically says to bring the foil up and over the roast and roll the edges tightly, leaving the seam about 6 inches above the roast.

Do not invent package sizes

The source lists one package of dry onion soup mix and one can of cream of mushroom soup without giving package or can sizes. Keep those quantities as documented rather than silently assigning modern sizes.

Ingredients

  • 4 to 6 lb. chuck roast
  • 1 pkg. dry onion soup mix
  • 1 can cream of mushroom soup
  • 4 to 6 medium potatoes peeled and quartered

Instructions

  • Place roast on large sheet of heavy-duty foil.
  • Mix soups and cover roast with soup mixture.
  • Add potatoes and bring foil up and over roast. Roll and secure edges tightly, about 6 inches above roast.
  • Bake at 350°F for 4 hours.
