Mock Apple Pie

Ingredients

  • pastry for 2 crust 9 inch pie
  • 36 Ritz crackers coarsely broken
  • 2 c. water
  • 2 c. Splenda
  • 2 Tbsp. lemon juice
  • 2 Tbsp. butter
  • ½ tsp. cinnamon

Instructions

  • Place crackers in prepared crust.
  • In saucepan, over high heat, heat water and Splenda to a boil.
  • Simmer for 15 minutes.
  • Add lemon juice; cool.
  • Pour syrup over crackers.
  • Dot with butter; sprinkle with cinnamon.
  • Place remaining crust on pie.
  • Trim, seal, and flute edges.
  • Bake at 425° for 30 to 35 minutes or until golden brown.

Source note: Contributor says this was given to her by friend Sue Tucker from Kansas. They were both diabetic and shared recipes; she notes it resembles apple pie.
