Texas Beef Skillet

Ingredients
- 1 lb ground beef
- ¾ cup onion chopped
- 1 can diced tomatoes 16oz, undrained
- 1 can red kidney beans drained and rinsed
- ½ cup instant rice uncooked
- 3 tbsp green pepper chopped
- 1½ tsp chili powder
- ½ tsp garlic powder
- ½ cup water
- ½ tsp salt
- ¾ cup cheddar cheese shredded
- 8 oz corn chips
Instructions
- In a skillet, brown beef and onion, then drain
- Stir in undrained tomatoes, beans, uncooked rice, green pepper, chili powder, garlic powder, water and salt
- Bring to a boil
- Reduce heat, and simmer covered for 20 minutes, stirring occasionally
- Top with cheese, cover, and heat until the cheese melts
- Sprinkle corn chips around the edge of the skillet
- Let cool, serve and enjoy!
