Texas Beef Skillet

Ingredients

  • 1 lb ground beef
  • ¾ cup onion chopped
  • 1 can diced tomatoes 16oz, undrained
  • 1 can red kidney beans drained and rinsed
  • ½ cup instant rice uncooked
  • 3 tbsp green pepper chopped
  • 1½ tsp chili powder
  • ½ tsp garlic powder
  • ½ cup water
  • ½ tsp salt
  • ¾ cup cheddar cheese shredded
  • 8 oz corn chips

Instructions

  • In a skillet, brown beef and onion, then drain
  • Stir in undrained tomatoes, beans, uncooked rice, green pepper, chili powder, garlic powder, water and salt
  • Bring to a boil
  • Reduce heat, and simmer covered for 20 minutes, stirring occasionally
  • Top with cheese, cover, and heat until the cheese melts
  • Sprinkle corn chips around the edge of the skillet
  • Let cool, serve and enjoy!

Corn Casserole

Equipment

  • 13×9 inch pan

Ingredients

  • 1 can whole kernel corn with liquid
  • 1 cup cream style corn
  • 1 box Jiffy Corn Muffin Mix dry
  • ½ cup butter melted
  • 2 eggs beaten
  • 1 cup sour cream

Instructions

  • Mix all the ingredients together
  • Pour into a greased 13×9 inch pan
  • Bake at 350ºF for 35 minutes, or until golden brown
  • Let cool, serve, and enjoy!
